I’m not one of those food snobs who thinks that absolutely everything I cook has to be made from scratch. Though I believe that the results are usually better (and more nutritious) when all the ingredients are homemade, I’m not above using packaged ingredients such as vegetable broth or canned beans when the ingredients aren’t polysyllabic. I usually draw the line at using pre-mixed spices, though I make an exception for my beloved Maharajah curry powder and for more time-consuming seasonings like Thai curry pastes. So the first time I made this dish, I used green curry paste from a can, and it was delicious. It wasn’t food snobbery that led me to make my own green curry paste, but curiosity–a desire to see how all the individual ingredients combine to create something completely new. And in the process I found that the beauty of homemade curry paste is that you can still taste all the individual components–the heat of chiles, the sparkle of lime–a quality that’s lost during processing and canning. Homemade really is better.

Tasty Vegan Recipe: Eggplant Paprikash

This week, my guest Recipe of the Week is from Susan Voisin, the immensely talented blogger and photographer and creator of Fatfree Vegan Kitchen. I feel fortunate to have had Susan as the photographer of three (!) of my books: Vegan Express (2008), the forthcoming Vegan Holiday Kitchen (Nov 2011), and the even more forthcoming (as yet to titled) book on leafy greens (Spring 2012). And now, here’s Susan presenting this delectable eggplant dish:

As part of my agenda to convert everyone into Eggplant Lovers (aka Aubergine Admirers and Brinjal Buddies), I’ve transformed the traditional Hungarian chicken paprikash into a vegan dish worthy of an eggplant. Mild Hungarian paprika gives the sauce its vibrant color and rich, distinctive flavor, while tofu “sour cream” adds creaminess and zing. Serves: 4

Printable Version

  • 1 large onion, halved and cut into thin wedges
  • 3 cloves garlic, minced
  • 3 tablespoons paprika
  • 1/2 teaspoon red pepper (optional)
  • 1 teaspoon salt (optional)
  • 1 1/2 to 2 pounds eggplant (about 2 medium) cut into 1-inch cubes
  • 2 bell peppers, any color, sliced (I used red and yellow)
  • 1 cup vegetable broth
  • 14-ounce can diced tomatoes (I used Muir Glen Fire Roasted)
  • 1/8 teaspoon Liquid Smoke flavoring
  • 1/2 cup tofu sour cream (see below)
Tofu Sour Cream
  • 1/2 package (about 6 ounces) lite silken tofu
  • 1 tablespoon lemon juice
  • 1/2 tablespoon cashew butter or tahini
  • 1/4 teaspoon salt (optional)
Blend all the ingredients for the tofu sour cream until completely smooth, and set aside in the refrigerator until needed.

In a large, non-stick saucepan, sauté the onion in a small amount of water until it begins to brown, about 5-8 minutes. Add the garlic, paprika, and red pepper (optional), and stir for one minute.

Add the salt, eggplant, peppers, vegetable broth, and tomatoes. Cover and simmer until the eggplant is tender, about 15-20 minutes.

When the eggplant is done, check the seasonings and add more salt if necessary. Stir in the Liquid Smoke (optional) and the sour cream, and cook for another minute, until warmed through. Serve over pasta (I used Tinkyada Pasta Joy brown rice noodles) or rice.

Monday Motivation: Picking Up Where We Left Off

Hello,


Welcome to another Monday Motivation and I thought it would be interesting to touch on the importance of 'Picking Up Where We Left Off'. When Friday arrives, some of us seem to take our work home and by Monday feel so bent out of shape that we don't know where to start and how to begin a "new week". We surround ourselves with so many work responsibilities that we don't see how we can possible take a break and live a little during the weekend to prepare for another Monday. Everything in some of our lives are merged into one huge cloud, which ultimately becomes our demise or suppressors.


So, how can we begin Picking Up Where We Left Off on Friday to begin this new week beginning Monday for most? I would recommend finding a hobby or something that you have always wanted to do, but didn't know how the time would compliment the endeavor and just do it! NIKE says it best! Some activities like this may include: salsa dancing lessons, hiking, skiing, attending a book club or festival, going to see a movie, or just listening to meditation on a CD in a part of your home where you can be one with yourself.


As we get older and reach retirement and our bodies begin to change, we have to realize our new limitations. These limitations can hinder our travel, sporting endeavors, and even the emotional desire to do anything. If we as busy folks take the time off to have a release party on our own days off, we will be a lot more inclined to produce better results in our occupations or other jobs alike. We will have the drive and ambition to go another full week and not reach burn-out by Wednesday because we worked so much on Sunday. 


So, as an exercise for you and me, after work this Friday, lets take some time to do some activity that we have always wanted to do and/or explore. By doing this we will release unnecessary stress and empower our minds and bodies to begin on Monday, picking up where we left off.

Sunday Inspiration: You're Doing Just Fine

Hello,

I hope you're having a great Easter and Sunday in general. We are here again, in one piece, to celebrate another Sunday Inspiration. Today's Sunday Inspiration is to let you know that 'You're Doing Just Fine'.

Many times when we think we're about to fall off the deep end of life, there is always something that comes into our lives to remind us that 'We're Doing Just Fine'. I, myself, have hiccups and shortcomings that question my hopes and dreams, but when I get into my quiet place and assess how far I've come, there is a wake up call inside of me that said, Selena, You're Doing Just Fine.

We can't predict every roadblock. We can't predict every natural disaster. We can't predict every thunder-cloud. However, we can always hold on to the hope that there is something higher than ourselves available to us for immediate access when we don't know what in the world is going on and why.

When devastation hits, we wonder, 'Why is this happening to me?" and What did I do to deserve this?, but if you're able to speak those words after the devastation, then you were one of the chosen ones. You were chosen to live another day to share positive words of encouragement and speak mighty transformations into other people's lives in the same situation. We are bodies of hope, with a powerful tool of the tongue, to use wisely and with grace.

So when you think that all hope is lost or you just don't know how your going to pay your bills, where the money is going to come from, how am I going to pay the medical bills, or why does it always seem like 'stuff' is coming my way; go to your quiet place and think back over your life and then speak into yourself these words, I'm Doing Just Fine and truly believe it because 'You're Doing Just Fine'.

The day after her 14th birthday, my daughter E leaned against the door to my office and said, “Let’s go on a diet together.”
I was stunned into babbling: “You do not need to go on a diet. You’re a size 0. If you get any smaller, you’ll cease to exist.”
“I know. I don’t want to lose any weight. But it would be fun to do it together.”
I knew where this was coming from. Earlier that day she’d had lunch with a friend and her friend’s “awesome mom” who were doing a low-carb diet together.  She’d watched as her vegetarian friend put all the cheese and vegetables of her sandwich onto one piece of bread and ate it open-faced. She’d told me about the lunch in detail, and I could tell that there was something about the relationship between the mother and daughter that appealed to her, something that she wanted to share with me. And though the idea of her starting down this whole diet path at her age scared me to death, I said, “How about a cabbage soup diet?”  I never dreamed she’d say yes, but she did.

Tips For The Allergy Season Sufferers

Hello,
Two days ago, I was wondering why I became so congested, sneezing, and with watery eyes. Then I realized that it's ALLERGY SEASON. When I was younger, I never had to deal with allergy symptoms, but I guess as I'm getting older, my body is becoming more sensitive to things in the environment. So, I went online to search for the best tips for the allergy season sufferers like myself and came up with these two great videos. My senior clients use a lot of Kleenex and now I'm finding myself helping myself to the box with them as well. (In a weird way, I actually felt happy to have a reason to use Kleenex, since I see them wiping their noses all the time because I never have to use it :) )

Passover and Easter Recipe - Three Potato Salad with Spring Greens

Three Potato Salad with Spring Greens

This week, I wanted to present a recipe that would be appropriate and festive for both the Passover holiday and Easter meals. This gorgeous potato salad is a bit fancier than the kind you would take on a picnic or serve at a cookout, but not any more difficult to make. It combines three kinds of potatoes with the early greens of spring for earthy flavor with plenty of eye appeal. Blue potatoes are surprisingly easy to find, if you look for them, but if you can’t find them, simply substitute two additional medium sweet potatoes. Photo by Susan Voisin, FatFree Vegan Kitchen..

  • 1 medium sweet potato
  • 3 medium blue or purple potatoes
  • 2 medium yellow potatoes
  • 2 celery stalks, thinly sliced on the diagonal
  • 1/2 medium red bell pepper, finely diced
  • 1/3 cup pitted kalamata olives or sun-dried tomatoes, sliced
  • 2 tablespoons extra-virgin olive oil, or more, as desired
  • 2 to 3 tablespoons apple cider vinegar
  • 2 to 3 tablespoons minced fresh dill
  • Salt and freshly ground pepper to taste
  • 3 big handfuls baby arugula or baby spinach leaves, or a combination
  • Toasted pumpkin seeds (pepitas) or sunflower seeds for topping, as desired
Cook, bake, or microwave the three kinds of potatoes until done but still nice and firm. Plunge into cold water. Let stand until cool enough to handle, then peel and cut into 1/2- to 3/4-inch dice.

Combine the potatoes in a mixing bowl with the celery, bell pepper, olives, olive oil, vinegar, dill, salt, and pepper. Stir together gently.

Stir half of the greens in with the potatoes and line a serving platter with the rest. Mound the potato salad onto the platter, and scatter the seeds over the top. Serve at once.

Monday Motivation: Get Up and Go

Hello,

Personally, I know how hard it can feel for a senior citizen to get up and go. In my line of work as a senior caregiver, I spend my time getting clients up to start their day and it can be tough on them. There are aches and pains, where there were none yesterday, the brain becomes a machine of it's own, when managing thoughts and ideas, and sometimes it even becomes hard to eat because the taste buds just don't feel up to the dance. However, I do believe that no matter how bad some of my senior's may feel in their bodies, they still put on their best attire and get up and go. They may take a little bit longer to brush their teeth or put on their shoes, but they get up and go.
To open your eyes today was an opportunity for you and a gift to someone who needed to hear from you on today. As you watch the news today on the television or read the Monday newspaper headlines, you will see how lucky you are to have the opportunity to get up and go. I hope that your week will be peaceful and full of positive-minded people. You are so worth the best because you are the best! Have a great Monday and I'll speak with you soon. ~Selena

For those retired senior citizens who get up at 6 - 7am every morning to help their hubby or wife, to get the newspaper, to walk the dog, or to just have some quiet time, you've developed a routine that works! :D
