Two months ago, I was working with an
older woman in her early 60s on my second short film project. We
completed many rehearsals and she was identifying with her character
very well. However, when she arrived a couple of weeks later to film
her scenes, she seemed very tired, often thirsty and not
present in the moment. Although we did get our work completed, I left
that day wondering if she was okay. During a luncheon, I organized
for the cast, she informed me that she had found out from her doctor
that she was gluten intolerant. It would attack her body when she ate certain foods. I was so
uneducated by this and decided to do my homework on this topic and
find recipes that would help others who are living with this health issue.
MY HOMEWORK:

Gluten is a sticky protein that is found in many cereal grains including wheat, rye, barley and oats. It is what gives dough its elastic texture and gives bread its chewy consistency.
Gluten intolerance, also known as gluten sensitivity, is a condition where they body has an immune reaction when foods containing gluten are consumed.
Gluten intolerance symptoms are similar to those of celiac disease.
Some symptoms can include:
- anemia, diarrhea
- fatigue
- inflammation
- malnutrition
- weight loss
- weight gain
- muscle cramps
